Solid-phase Microextraction:Article Title: Synergistic effects of salt-tolerant lactic acid bacteria on flavour profiles, bioactive compounds and microbial communities in traditional earthen-jar fermented fruit radish paocai. Article Snippet: This study investigated the synergistic effects of three functionally diverse, salt-tolerant lactic acid bacteria on the physicochemical properties, bioactive compounds, antioxidant activity, metabolic profiles and microbial community composition during traditional earthen-jar fermentation of novel fruit radish paocai.. The results indicated that paocai co-fermented with tri-strain attained a pH of 3.50 ± 0.1 by day 7 with remarkably accelerated acidification and a minimum nitrite content of 6.05 ± 0.11 mg/kg, and enhanced sensory attributes compared with other experimental groups (P < 0.05).. Moreover, this group showed considerably elevated concentrations of total phenols (0.70 ± 0.15 g/kg), flavonoids (0.87 ± 0.05 g/kg) and anthocyanins (72.72 ± 0.05 mg/kg), along with markedly improved antioxidant activity (P < 0.01). |
